With summer winding down, we are trying to squeeze in as many summery desserts as possible at our house.

My two year old eats strawberries by the case full, so I knew this was a dessert our whole family would love.

I love that it is low fat, and requires no baking time. This makes a perfect summer or spring dessert, because you don’t have to heat up the house, by using the oven.

You are going to love how simple this cheesecake is. I am a huge cheesecake critic, and I prefer this over any other cheesecake, because it tastes a little less heavy and thick, but still has all the flavor.

I love the taste of this cheesecake, topped with fresh fruit. However, if you are looking to switch things up, we highly recommend a few other toppings you need to try. Here are a few of our favorite:

Ingredients

  • 1 (8 oz) container Fat Free Cool Whip
  • 8 ounces fat free cream cheese
  • 1 (9 inch) pre-made reduced fat graham cracker pie crust
  • ¼ cup granulated sugar
  • 2 teaspoons vanilla extract
  • 12 strawberries sliced lengthwise

Instructions

  • In a large mixing bowl, cream together cream cheese, vanilla and sugar until light and fluffy. Add Cool Whip and mix until smooth. Pour mixture into your pre-made pie crust and refrigerate for a few hours until set up. Arrange your sliced strawberries on top and serve.
